Mix the soy sauce, honey and minced garlic together in a small bowl or jug. That's your sauce. Taste it — it should be salty, sweet and garlicky. This is also your marinade if you have time — chuck the chicken in it for 20 minutes before cooking for extra flavour. If you're hungry now, skip the marinating and cook straight away.
Heat oil in a large frying pan over medium-high heat. Pat the chicken thighs dry with paper towel — this is important, dry chicken browns properly, wet chicken steams and goes pale and sad. Place chicken smooth side down in the pan. Don't move it for 4–5 minutes until deep golden brown underneath.
